Acciuleddi e Meli: the braided ritual of Sardinian Carnival with warm honey, memory and tradition

Every celebration has its symbolic dessert.
Because taste is memory. It is ritual. It is something that returns each year, familiar yet never quite the same.

At Carnival, we immediately think of fritters. Soft. Sugared. Irresistible.
Yet every land keeps something less predictable.

In Sardinia, alongside fritters, there are Acciuleddi e Meli, a traditional Sardinian Carnival dessert that is less known yet deeply authentic.

Acciuleddi e Meli are small braided fritters, fried until golden and dipped in warm honey scented with orange zest.
They do not try to impress. They simply linger.

Their shape is not just aesthetic.
The braid speaks of unity, continuity, family. It is a dessert born at home, among floured hands and slow conversations.

Ingredients

500 g plain flour
125 g lard
1 egg
50 g sugar
Warm water as needed
Orange zest
Peanut oil for frying
Honey for glazing

Method

Sift the flour into a large bowl.
Add the softened lard, sugar and egg.

Gradually add warm water, just enough to form a compact dough.
Knead by hand until smooth and even.

Let it rest for a few minutes.

Take small portions and shape them into medium-thick ropes.
Braid them into small plaits.

Heat plenty of peanut oil.
Fry a few braids at a time until evenly golden.

Drain on paper towels.

In a saucepan, warm the honey with very thinly sliced orange zest.
Dip the braids into the warm honey and leave them for a few minutes, until fully coated.

Serve Acciuleddi e Meli warm, glossy and fragrant.
